2017 Domaine Hippolyte Reverdy Sancerre Cuvee Ortus, Loire, France
The rarest of the Reverdy cuvées, Ortus was really an invention at the urging of Kermit Lynch, who has a fondness for Sauvignon with full malolactic fermentation, aged in wood, bottled unfiltered, generally treated like a white Burgundy. You have probably never imagined that Sauvignon could taste like this.
A Sancerre that is loaded with classy white Burgundian character and perfectly fashioned for hearty meals. Don't miss it-Sancerre with this much character is as rare as Le Montrachet. Cuvée Ortus is only bottled in exceptional vintages. Selected juice is initially fermented as regular Sancerre Blanc, undergoes malolactic fermentation, but wine is aged in 400L oak barrels, and the lees are stirred daily for a year. The wine is then racked into neutral cask where it ages and settles for an additional year. Bottled unfiltered then aged for another year in bottle before release.
