Winemaker Notes
Harvest is done by hand with strict grape selection; they pick in different phases to select bunches of grapes according to their ripening. Grapes are crushed in a wooden vat by foot. No additives or sulfites are added, and the must undergoes natural, indigenous yeast fermentation in glass-lined cement vats. After fermentation, the wine ages for roughly six months prior to being bottled. The Trebbiano is bottled by hand without filtering. Rosa Pepe, the family matriarch, decants and re-bottles every single bottle in their cellars to take out the deposits which have formed naturally during the aging process.

Tasting Notes from previous vintage

Deep yellow, almost orange; the hot dry year really shows in this wine’s relatively dark color, despite no maceration on the skins. Mellow aromas and flavors of vanilla, lime and dried herbs. Finishes long and round, with very smooth nuances of orange oil and orchard fruit and strong salinity. Emidio Pepe’s Pecorino wines, a variety the Pepe family admits not having much experience with, are improving steadily year after year.
