Winemaker Notes
Viticulture: Each parcel is farmed organically and Rémy implements bio-dynamic practices. He along with neighboring friends Antoine Paillard (of our Champagne Pierre Paillard) and Benoît Lahaye make their own organic compost to fertilize their vines.
Viniculture: In 2014, Rémy vinified and kept at least one barrel from each of his plots in order to understand the expression of each individual terroir. Grapes are picked and a double sorting is employed - one immediately at the vines and one before they are gently pressed. Vinification and élevage occurs "sur lies fines" in 300L barrels. Malolactic fermentation is not rushed or controlled and naturally completes. Tirage occurred July 2016. 65% Pinot Noir and 35% Chadonnay.
Aging: Aged for 18 months sur lie. 3.5g/ L of dosage. Unfiltered.
Production: 1,642 bottles produced.
