I Tant Brut Nature Reserva shows a bright golden depth with greenish hues, a constant string of fine bubbles rising to the top and formed a splendid crown of foam. At the start, Spring floral notes, followed by slight citrus fruits and pleasant baker´s yeast on the nose. Mouth entrance is smooth and elegant, with fine and very well integrated bubbles. Excellent acidity well adapted with a bitter finish becoming imbued of all its strength and complexity. It should be notes the residual bubble grapefruit on the palate.

Vinification: the quality achieved by I Tant Cava Brut Nature Reserva starts in the vineyards. Planted on loam soils, providing a good porcentage of air(oxygen), water and organic matter. The combination of the soils, indigenous grapes and Mediterranean climate are at the heart of our cava. Once the grapes have been harvested and selected, they go into the press and pressure is applied in order to obtain the first fraction of the free run juice, the highest quality must. After the first fermentation, a slow second fermentation takes place, at low temperature and a silent rest on the lees. The 50% of Xarel·lo provides the body and structure necessary to tolerate the passage of time. 25% Macabeo offers elegance, delicacy and delicate bitter notes with aromas of white and sweet fruit. 25% of Parellada closes the coupage with a slight citric acidity very refreshing. Maximum expression of the indigenous White grapes as Parellada, Xarelo and Macabeo, varieties from Penedés expressing each own uniqueness. Shows its best during the next 3 years
