The Dalmore's newest release and a private selection for Total Wine, today’s 12-Year-Old 'Sherry Cask Select' began its maturation with ten years in American white oak ex-bourbon casks, giving the whisky a classic chocolate, sweet orange, and spice character. The whisky was then transferred to the bespoke casks, which had been seasoned with a unique proprietary blend of aged Oloroso and Pedro Ximénez sherries. This final 2-3 year evolution in sherry cask added further complexity to the rich, copper-hued whisky, swirling in nuances of toffee, dried fruit, cinnamon, ginger, and honey. The whisky was bottled at 43% ABV, a higher strength than The Dalmore’s original 12-Year bottling, and is pure decadence on the palate. The powerful character from both types of oak carries through to the finished dram, but neither overwhelms the elegance of the spirit; the flavors all exist in seamless harmony. The Dalmore has demonstrated time and again its devotion to achieving perfection in the glass, and this exceptional new release continues that trend.
