From Wilderness Trail comes this Small Batch Bourbon, and its mash bill is dominated by corn (obviously, because bourbon), with smaller proportions of rye and malted barley. It's matured in a mixture of toasted and charred barrels, with only 12 barrels produced in each batch. It's also bottled in bond, as per the Bottled-in-Bond Act of 1897.
Tasting notes:
Nose: Peppery freshly baked bread, accompanied by wood smoke and just a hint of honey.
Palate: Orange peel, rich oak and some berry jam, with cigar box and a tropical fruit tang.
Finish: Cinnamon buns and cooked apple.
