This whiskey is a fantastic example of how cask maturation can influence flavour. It has been triple-distilled and then aged in three different types of cask. Most of the maturation takes place in ex-Oloroso sherry casks and ex-Bourbon barrels before it is finished together in port casks.
The result is a single malt packed with sweetness and personality with a smooth almost syrupy finish. There are many great Irish single malts and this 16-year old is one of the very best.
