Wine Profile / Tasting Notes
On the nose, intense notes of sour cherry, red fruits, blueberry and pleasant hints of spices and rhubarb. On the palate the wine is full, rounded, strongly structured. The high alcohol grade is perfectly balanced by velvety tannins and balsamic notes ensuring excellent drinkability. Harmonic to the taste, fresh sour cherry, perfect balance between juice and sugars. Valpolicella classic stands out for its pure elegance.
Vineyard Notes
The soil is rich in limestone, tufa and clay.
Production Notes
The harvest is done by hand between the end of September and beginning of October using small crates to preserve the quality of the grapes. Then, the selected grapes are pressed. The fermentation and maceration process lasts about 15-20 days at controlled temperatures. In January, the wine is re-fermented for 5-6 days over the Amarone pomace and then left to mature in large oak barrels for 24 months.
