Winemaker Notes
Jean-Marc Boillot, a member of the younger generation in Burgundy, sought to elevate his family's wines. In 1984, after working at his family's domaine, he left to pursue his vision of crafting highly concentrated wines. He honed his skills as a winemaker at Olivier Leflaive while also producing wines under his own label. Impressed by his work, his grandfather bequeathed half of his vineyard to Jean-Marc. Operating from his grandfather's house and cellars in Pommard, Boillot inherited exceptional vineyards from his maternal grandfather, Etienne Sauzet.
The white wines, excluding the grand cru, undergo a consistent vinification process: whole-bunch pressed, settled for 24 hours, then aged in barrels with 25 to 30 percent new wood. They are characterized by purity, freshness, and appeal. For the reds, destalking is followed by a cool soak before fermentation, with punching down and pumping over techniques used based on vintage and vineyard. After thirteen months in barrels, half of which are new, and six months in tanks, the reds exhibit a vibrant balance between fruit and barrel, suitable for medium-term aging.
