Winemaker Notes

COS's Nero d'Avola Nero di Lupo is produced from the Vittoria vineyards. The plants are about 12 years old, are grown organically at about 250 metres above sea level, on red soils with sub-Apennine sands of calcareous origin. The harvest takes place between the end of September and the beginning of October; the fermentation is strictly spontaneous by indigenous yeasts and the refinement then takes place in cement vats and bottles. This Nero d'Avola is a frank and territorial expression of the vine that still today represents most of the Sicilian wine, according to the creed and the ways of COS, always devoted to the search for the ancestral characteristics of nature.

Tasting Notes
COS's Nero d'Avola Nero di Lupo is ruby red with youthful purple reflections. The nose is soothing, with notes of mulberry, composed of watermelon, myrtle, black pepper, and hints of cocoa beans, leather and anchovy paste. The sip is fresh, with chiselled tannins, beautiful flavour and pleasantly balsamic length. Very good both with fresh pasta with spiced courtyard meat sauce and with octopus in jail.
