WINE PROFILE / TASTING NOTES
This wine is named after the “Alta Valle del Calore” at the feet of the “Picentini” mountains. It has a huge structure together with a suitable freshness that makes it particularly suitable for ageing and able to express an important potential in odour and taste with myrtle and liquorice marks. Enveloping and profound in its complexity.

PRODUCTION NOTES
Harvesting and sorting of the grapes by hand in small 15 kg boxes. After destemming, the must is left to macerate in large 50 hl barrels with the skins at a temperature between 28° and 30° for 30 days. The fermentation in wood allows a more homogeneous maceration and a natural micro-oxygenation that better fix the color and reduce the tannins. The pressed wines are completely discarded to prevent the tannic texture of the wine from being too angular. The malolactic fermentation takes place in first and second passage barriques where the wine remains for about 12 months with 3 rackings, before moving into 25 and 50HL tonneaux for another 24 months where contact with the wood is minimal and serves only to naturally oxygenate the wine. Further 12 months of refinement in the bottle before being marketed.

WINEMAKER NOTES
The Taurasi Alta Valle is the result of a careful selection of Aglianico grapes grown around the cantina in the town of Castelfranci, at 690 meters above the sea level with south-west exposure and a yield of about 50 quintals per hectare. The Alta Valle has a minimum ageing of 36 months in big wood barrel and at least one year in bottle before commercialization
