Rakufumai is a new sake brewing rice that was registered nationwide in 2014. It is a combination of the table rice strain "Dontokoi" and the sake brewing strain "Gohyakumangoku". Sake brewed from this locally cultivated strain has a light and airy quality that brings out the flavors of various spices and herbs to complements dishes. The label evokes the imagery of a dragonfly emerging with its wings at the end of summer, and the heart-shaped rice grains represent the hope of fruitful autumn to come.
